All the dry ingredients you will need to bake 2 - 8 inch Funfetti round cakes or 9x13 or 24 standard cupcakes.
Preheat the oven to 350°F. Prepare two 8-inch round cake pans with nonstick cooking spray. In a bowl, whisk together milk, eggs, oil, warm coffee, and vanilla until frothy.
Simply pour the mason jar cake mix into the wet ingredients and mix until just combined. Do not overmix. Pour the cake batter to divide and spread it evenly into the prepared pans. Bake for 25-30 minutes. For cupcakes start checking around 15 minutes.
